Ingredients
- 50g Barbers cheese
- 6 free range eggs
- 1 large onion
- 1 red pepper
- 100g of bacon lardons
- 1x Onion
Method
- Fry the bacon add finely sliced onions and pepper and fry until soft.
- Cracking the eggs into a jug add salt and pepper.
- Remove the mix and form into patties and chill
- Take a standard muffin tray and lightly grease with vegetable oil.
- Slice the red pepper and place under a hot grill cook until lightly charred .
- Next pour the egg mixture into the muffin tray up to around half way
- Lightly toast the brioche bun and set aside.
- Take a spoonful of the bacon onion pepper mix and add to each.
- Finally sprinkle liberally with Barbers cheese.
- Place in the centre of a previous heated oven at 200 degrees for 15 minutes.
