Cheese and jalapeño muffins

Ingredients
        • 6 tbsp vegetable oil
        • 3 eggs beaten
        • A small pot of natural yogurt
        • 150g Barbers Coastal cheddar, grated
        • 250g self raising flour
        • 3 tbsp chopped jalapeños
Method
  1. Preheat the oven to 180C fan and line a 12 hole muffin tin with paper cases.
  2. In a bowl combine the oil, eggs and yogurt and beat well with a to combine. Stir in the cheese and season.
  3. In another bowl, combine the flour and jalapeños then make a well in the centre and pour in the cheese mixture.
  4. Combine all of the ingredients together then spoon into the muffin cases.
  5. Bake for 20-25 mins until risen and golden.
  6. These muffins will work with almost any cheese and you can substitute chopped herbs if you don’t have any chilli's. Try goats cheese and chive, cheddar and rosemary or Red Leicester and thyme.
